Salted Egg Squid

Apart from boiling or frying and having as a condiment to congee, in Thailand, salted eggs are  also often cooked with other foods as flavoring. Anything made with salted egg is rich,  creamy, delicious and addictive, I love them all.

Today I am going to share with you my family 's favorite: salted egg squid recipe. It is really easy and quick to make but delicious nonetheless.  Even a novice to Thai cooking can whip this up with fabulous result.  


If you don't have an access to salted egg, don't fret. You can make homemade salted eggs.

Below is my salted egg squid recipe. Try it out. I am sure you will love it. 


Ingredients 
                                                Yields 3-4 servings Clock30 minutes
300 grams squid, cleaned, cut and scored
1/2 stalk celery cut into bite size pieces
1/2 onion sliced thinly
3 red chili peppers cut diagonally
1 stalk spring onion cut into bite size pieces 

for the sauce
3 tablespoon water
2 hard boiled salted eggs (yolk only) 
1/2 tablespoon roasted Thai chili paste 
1 tablespoon oyster sauce
1/3 tablespoon light soy sauce
1/2 teaspoon sugar 
1/2 tablespoon milk or coconut milk 

3 tablespoon vegetable oil for stir frying 

Preparation
1. Parboil the squid and set aside. Why I parboil the squid?  To get rid of some gunk and to reduce gamy seafood smell in the sauce. 

2. Mix the salted egg yolks with water, than add all the sauce ingredient. Mix well. 
3. Heat up the wok with vegetable oil. Add in onion. Cook until the onion is soft, then add in the squid. 

4. Pour in the sauce mixture. Add in celery, red chili peppers and spring onion. 

5. Do few quick stirs.  Remove from heat. Serve immediately. 


It is great to ladle this delicious sauce over the steamed rice. Enjoy!
