Easy Thai Recipes and beyond


Ingredients
5 tablespoon fish sauce 
5-6 red chili peppers, sliced thinly 
1.5 tablespoon lime juice 
a pinch of sugar 
1 clove Chinese garlic, sliced thinly 
Preparation 
1. Combine all the ingredients in a bowl and mix well to serve.

Ingredients 
20 cloves Thai garlic 
a pinch of sugar 
4 tablespoon vegetable oil 
Preparation 
1. Peel of the garlic skin. Smash them lightly with a pestle on cutting board. 
2. Chop them up lightly into smaller pieces with a cleaver. Add in sugar. 
3. Heat up the oil to deep fry the garlic. When the oil is slightly heated, toss in garlic. 
4. Cook slowly, keep stirring.   Get them off the wok quickly once you spot some browning. The garlic will continually brown once taken off the wok. Better to be undercook than to overcook. They can be really bitter when burnt. That would be mood spoiler!

This fried garlic can be sprinkled on porridge, noodles, fried fish, soup, etc.

Ingredients 
400 grams chicken bone
200 grams white radish (Daikon), peeled, cut into thick pieces 
2,000 ml. water 
1/2 stalk celery 

Preparation
1. Place the chicken bone and all the ingredient in a pot, cover with water. 
2. Simmer for 45 minutes, use a spoon to scoop out any brown foam. Remove from heat. 
3. Strain the stock through sieve. If you are not using the stock right away, save it in a bottle and keep in the refrigerator for 3-7 days or in the freezer for 3 weeks.
