Stir Fry Pork Liver with Bell Pepper

As far as I can remember I have always been a big  fan of pork liver. It is juicy, full of flavors, nutritious and very versatile. I love it in all  form : ground, smoked, boiled, grilled, deep- fried, stir fry, etc. I think I have pork liver almost on weekly basis. And I never get bored of it. 


"Stir fry pork liver with bell pepper" is one of my favorite Thai dishes and it is also happen to be incredible to prepare which makes it prefect for anytime of the day. The pork liver is stir fred in garlicky sweet savory sauce with crunchy bell peppers, which give both interesting texture and beautiful colors. If you like it hot, use more chilies.  



Stir Fry Pork Liver with Bell Pepper 
Ingredients 
200 grams pork liver, cut into bite size
1/2 large size bell pepper, cut into fine strips
2-3 chilies, diagonal sliced 
1/2 large size onion, sliced 
2 spring onion, cut into bite size
1 tablespoon garlic, pounded 
1 tablespoon oyster sauce 
1/2 tablespoon light soy sauce 
little sugar 
some vegetable oil for stir frying 

Method
1. Heat a wok with some oil. Add in garlic, stir fry until aromatic. Add in onion, chilies cook until slightly soft. 
2. Add in pork livers. Season with light soy sauce, oyster sauce and sugar. Stir fry until are done.
3. Add in bell pepper, spring onion. Do few quick stirs. Remove from heat. Serve hot with steamed rice.
