Easy Thai Recipes and beyond

I have said many times before but some of you are new here, so I say again--I love shrimp and I think shrimp is a perfect food. If there is only one food that I can choose, then it is going to be shrimp. I love it that much. I usually stock up more than enough medium size shrimp in my fridge so that I can enjoy it as often as I could. 


Sir Fry Shrimp with Red Chili Peppers, Goong Pad Prik Daeng กุ้งผัดพริกแดง, today 's recipe, is one the easiest ways to cook shrimp. It would take just 10-15 minutes to whip up this flavorful yet light dish.Though the recipe calls for some spices that you don't normally stock in your pantry, but you can surely get them from most Asian supermarket.

This is Thai Style Sweet and Sour Pork Ribs, a delicious stir fry dish with tender pork rib cutlets. If you love pork ribs, I recommend you to try them this way.  With savory sweet and sour sauce, the ribs are very flavorful yet delicate to the palate.  

Like a lot of stir fry dishes, this sweet and sour pork ribs are super easy to make. You really need to boil the ribs, cut vegetables and stir fry them with basic ingredients in your kitchen like ketchup, chili sauce, sugar and light soy sauce. If you like crispy outside and soft juicy inside ribs, you can boil it first then deep fry them. Today I didn't deep fry the ribs as I wanted to keep things a little bit on healthier side and tried to spend less time in the kitchen.

Most Thais love clams especially ones stir fried with spicy sauce and I am no exception.  I grew up eating a lot of clams as my mother would buy them from our local market and cooked them into variety of delicious dishes such as, steamed clams with lemongrass, baked clams with garlic and this wonderful spicy clams. In my opinion, their briny and sweet flavors go well with almost any kind of sauce and spices.

Apart from boiling or frying and having as a condiment to congee, in Thailand, salted eggs are  also often cooked with other foods as flavoring. Anything made with salted egg is rich,  creamy, delicious and addictive, I love them all.

Today I am going to share with you my family 's favorite: salted egg squid recipe. It is really easy and quick to make but delicious nonetheless.  Even a novice to Thai cooking can whip this up with fabulous result.

When my family and I lived in Thailand, we often went to Koh Larn for long weekend, setting out to eat our way through the city, experience all culinary offering there. 

Koh Larn is a lush green tropical island which has beautiful beach and crystal clear sea water.    It is also popular for delicious cheap eats, many right on the beach, serving up fresh catch of the day seafood. One of the great sea food dishes we stumped upon there was Salt and Chili Shrimp, Goong Pad Prik Gleur (กุ้งผัดพริกเกลือ). The head on, tail on jumbo shrimp was deep fried and drenched in spicy, salty and aromatic sauce.  It was so delicious and remains one of our favorite food memories.

With all the recipes I have on hand, I am still at a loss at times on what to cookSick smile. I usually defrost something the night before and think about what to do with it in the following day. So I tend to cook in a hurry in the morning and the best and quickest way for me to get the breakfast ready is to make a stir fry.

Yesterday I bought a large tray of frozen shrimp from nearby supermarket because it looked really appetizing and dirt cheap. I defrost some and made stir fry Thai sukiyaki with shrimp this morning.

When I was in primary school, my mother usually prepared me a lunch box. My lunch box was really heavy since my mother always packed twice as much food for a girl. She just wanted to make sure that I got more than enough food.  Besides that my lunch box (and so did many other friends') was made of stainless steel and had 3 stackable layers. (picture) I didn't know why my mother chose that lunch box for me. Maybe it was the trend.

I love walking out our back door to pick up fresh herb. One of the many joys of summer. 
Earlier this week, our Thai basil plants were exploding so I went outside to grab some to make basil squid. 

Basil squid is squid stir fired with lot of chilies, garlic and basil leaves. It is usually served on rice as one dish meal for breakfast or for lunch- often topped with crispy fried egg. Of course, in Thailand, it also appears as one of courses in a shared family style meal.

As far as I can remember I have always been a big  fan of pork liver. It is juicy, full of flavors, nutritious and very versatile. I love it in all  form : ground, smoked, boiled, grilled, deep- fried, stir fry, etc. I think I have pork liver almost on weekly basis. And I never get bored of it. 


"Stir fry pork liver with bell pepper" is one of my favorite Thai dishes and it is also happen to be incredible to prepare which makes it prefect for anytime of the day. The pork liver is stir fred in garlicky sweet savory sauce with crunchy bell peppers, which give both interesting texture and beautiful colors. If you like it hot, use more chilies.

Cashew nuts are always ones of my favorite nuts ever. I usually buy them by kilo and keep all of them in the fridge to ensure the freshness. I eat them almost daily as all time snack and always add them to my favorite sweet and meat dishes. I love both the crunchy texture and nutty favor cashew nuts bring to the dishes.

I love Stir Fry Catfish in Red Curry Paste. Not only because it is extremely tasty, yet simple and down to earth dish. This is the recipe that usually bring  back my high school memories. 

Apart from street vendors, Stir Fry Catfish in Red Curry Paste is commonly sold in  Thai school cafeterias.
