Easy Thai Recipes and beyond

Sweet radish is my husband's favorite food. Every week, I have to make sweet radish for him to go with steamed rice plus other dishes I cooked. Besides, I love to add it in Pad Thai and other stir fried dishes. The sweet radish tastes so refreshing and super delicious for him. The happiest moment being a home cook is when your family enjoys the foods you make....I am no exception.   
    
Though the sweet radish is easily obtainable in Tokyo, I sill prefer a home made version. I want three things from my food : I want to know what's in it; I want a rich natural favor; and I want to feel some measure of self reliance. The global supermarkets can't give me any of these things. Home food preservation can. Besides that food preservation can save both money and calories.

It 's winter now in Japan, I am sure many people are bundling up at home and cooking, in stead of out and about in freezing weather. I am lucky that I am in Tokyo where winter is mild, in fact, this year there is no real winter here. However, being a woman from tropical country, I feel cold whenever the temperature drops below 25°C.

As I don't want to go outside, I preserved a lot of food for consumption: I froze vegetables, fruit and even sushi rice. Besides freezing, dehydrating is another great way to preserve food that I especially love because it is so easy and only takes a little extra time.

One of the projects that I tackled over last weekend was making Thai Soured Fish (ปลาส้ม). As the weather in Tokyo was getting warmer and I found that the spring weather is the perfect time to do home preserving. 

Thai Soured Fish (ปลาส้ม) is a type of fermented or soured fish that is a very popular staple. It is made by packing raw fish with cooked rice, garlic and salt then curing it at room temperature for 3-5 days. The end result will be the fish that is both sour and salty-- and the meat is somewhat tenderized through the fermentation process. I love to deep fry this soured fish but from what I heard grilled soured fish is as tasty, especially when the fish is wrapped in banana leaves. If you have a charcoal grill, then grill it.

I love salted eggs and anything with salted eggs fills me with joys. I love them fried, boiled or added to stir fried dishes. So I am more than happy and pretty excited to make these delicious salted eggs at home. 

The first time I learned how to make tasty salted eggs I was still in primary school. It was so long ago but amazingly I can visualize myself cleaning those big beautiful translucent white duck eggs , carefully line them in the jar and cover them with the brine in one cooking class. I remember myself carefully carrying a large jar choke full of my very first salted eggs back home and enjoy them with my family. It is one of my vivid childhood memories.
