Garlic Shrimp

When I was in primary school, my mother usually prepared me a lunch box. My lunch box was really heavy since my mother always packed twice as much food for a girl. She just wanted to make sure that I got more than enough food.  Besides that my lunch box (and so did many other friends') was made of stainless steel and had 3 stackable layers. (picture) I didn't know why my mother chose that lunch box for me. Maybe it was the trend. 

No matter how heavy the lunch box was, I was never mind carrying it. Since it was full with good delicious home cooked foods, mostly were my favorite.

I loved (and still love) shrimp and anything with shrimp. So my mother packed  my lunch box with tasty shrimp dish at least two time a week. I was pretty much spoiled. 

One of my mother 's foods I loved was garlic shrimp. The juicy shrimp was lightly stir fried in garlicky, peppery aromatic sauce. It went great with perfectly steamed fluffy jasmine rice. I never had leftovers. 

Today I got plenty of fresh shrimp with the heads on. And my husband suggested garlic shrimp for lunch. Then I heated up the wok and made this delicious garlic shrimp. Needless to say our lunch was so delightful.  Below is my garlic shrimp recipe.   

Ingredients
200 grams shrimp, shelled, deveined, heads and tails intact 
2 tablespoon vegetable oil 
1.5 tablespoon oyster sauce 
1/2 teaspoon fish sauce 
0.5 tablespoon soy sauce
little sugar 
4-5 cloves garlic, pounded 
10 dashes black pepper, pounded 
1/4 cup water 
Method
1. Marinate the shrimp with garlic, pepper, oyster sauce, fish sauce, soy sauce and sugar for 10-15 minutes.
2. Heat up the wok. Add in vegetable oil. When it is hot, add in shrimp and the marinate. 
3. Cook until the shrimp changes color. Add in the water.  Cook until the sauce is thicken. 
  4. Dish out, serve immediately with steamed rice.
