Easy Thai Recipes and beyond


For those who have been to Thailand probably well aware that there are so many variations of Som Tam, spicy Thai green papaya salad with mortar. There are some that made with entirely out of fruit (ส้มตำผลไม้), with fermented rice noodles (ตำซั่ว) or with fresh vegetables e.g carrot, cucumber . Also there are some flavored with dried shrimp (ตำไทย), fermented pungent water fish (ปลาร้า), salted egg or pickled fresh water crab (ปูเค็ม).    

Spicy cucumber salad with a mortar, Tam Taeng, the recipe I am going to share with you is the variation that made with fresh cucumber, which I like it even more than the traditional green papaya salad. You may notice that I used fresh lovely Japanese cucumber for this recipe. It's simply because Thai cucumber are not available here in Tokyo and it works beautifully. So if you can't find Thai cucumber, feel free to substitute with vegetables that are crisp with mild and clean flavored, not prone to oxidation and can hold their shape well.

I've been craving for Spicy Deep Fried Catfish Salad(ยำปลาดกฟู) for a while. It's one of those dishes I would get whenever I go to Bangkok. Whenever I visit Bangkok、I always head out to local flee markets. There are plenty of authentic spicy foods, and one of the dishes I enjoy a lot is Spicy Deep Fried Catfish Salad--crispy catfish with Thai style spicy dressing served with cucumber slices and tomatoes. 

Yesterday while I was grocery shopping, the store put out some canned tuna for sale. I immediately scored one of them and made this wonderful spicy deep fried Tuna salad. While charcoal grilled catfish is best for this kind of salad, but I want to make the best dish possible. So I drained off an excess water from tuna, patiently broke it into small flakes with a fork,deep fried it to golden crisp. Then I prepared the dressing with a lot of chilies, the way I like it. The end result was really rewarding.

Today recipe is Yum Woonsen (Spicy glass noodles salad, ยำวุ้นเส้น). This tasty spicy noodles salad was a favorite and a staple when I lived in Bangkok. It is very easy to make and always requested by my family.  This salad makes the meal and sometimes --it is the meal depending on how much are you hungry.

Morning Glory is a climbing vine that grows around the world -- and it is a damn tasty food. I love morning glory and have cooked it thousand ways  and it turns out amazing every time

I speak from experience, morning glory is good with curry, stir fry, chili dip and noodles dishes. And if you have a little more time to cook (probably on weekend), I would recommend spicy deep fried morning glory -- one of the best ways to enjoy this wonderful long stem weed.  I bet you wouldn't  say no to this, especially if you love fried food.

For today recipe,  I prepared very refreshing Spicy Grilled Pork Salad (Nam Tok Moo, นํ้าตกหมู) because it's been a while since I have shared Thai style salad. Spicy Grilled Pork salad is a very popular north eastern dish served at many street stalls in Bangkok. I hope you enjoy making this easy salad at home. 

The keys to making this delicious meat salad are the PORK and "dressing". 

Pork: I highly recommend you to use pork butt for this salad because they  contain enough fat that carries the flavors over your taste buds. 

Dressing : I like my salad dressing super hot and very spicy but this is up to you but please be generous with the amount of herbs and spices, e.g, shallots, peppermint leaves. Also for the best texture, don't skip the toasted ground rice, then you will get spicy grilled pork salad with the restaurant taste .

When I was in college I loved to enjoy an extra long lunch with friends at Sam Yan market, whose cheap but delicious upstairs restaurants were tremendously popular with young people. Our lunch time was always full of chit chat and, of course our favorite foods. 

 Moo Manao (Spicy Pork with Lime) was one of spicy salad dishes we loved and often ordered. To us having Moo Manao was like having a cup of coffee,...well definitely not in term of taste, but in term of the wake up call for the brain.  Moo Manao was not contain any caffeine, instead it is the harsh spiciness that made our brain ticking. Pla Goong, พล่ากุ้ง (Spicy Shrimp Salad), is a popular herb laden salad dish. Pla Goong  is spicy, refreshing, quick and easy beyond belief to make. The dish uses fresh peppermint leaves, kaffir lime leaves and lemongrass to enhance the flavor. The spiciness comes from both fresh chili and roasted chili paste. Pla Goong can be made with parboiled or grilled shrimp. Either way it is delicious. The larger the shrimp, the better, though.

One thing I love about dad is that he is excellent home cook. He enjoys cooking, experimenting new recipes and always makes kitchen magic right in our home.  
He usually spends hours in kitchen cooking, baking whenever he frees from work, 
lucky my mom.:-) 
Daddy 's food is super delicious that I 'm willing to eat whatever he made.
