Pumpkin Balls in Coconut Syrup

Pumpkin Balls in Coconut Syrup or "Boa Loi" in Thai is one of the most famous Thai desserts. This dessert is widely available ; it can be found a range places from street vendors, restaurants and gourmet section in supermarkets. Boa Loi ,which literally  means floating lotus  is addictive. The soft and sticky rice balls served in warm , mildly sweet coconut syrup are tempting. You will ask for more. 



Before making this pumpkin balls, I tried making taro balls with Japan taro. It didn't come out right.  Japan taro 's taste was too mild for Thai dessert. 


Today I made Boa Loi with Japan pumpkin, and it worked!! 


Below is authentic and easy Pumpkin Ball in Coconut Syrup (Boa Loi บัวลอย) 's recipe. 


Ingredients for the pumpkin balls 
400 grams pumpkin
100 grams glutinous rice flour  
2 tablespoon cassava starch 

Ingredients for the coconut syrup
250 cc. coconut milk
80 cc. water 
2 tablespoon palm sugar 
5 tablespoon sugar 
little salt 

Method 
  • Peel and clean pumpkin, cut into small pieces.  Bring water to the boil, add in pumpkin. Cook until it is done and soft.  Transfer into a mixing bowl.
  • Add in the glutinous rice flour and and cassava starch. Mix and knead with hand to form a smooth dough. 



Then roll the dough into small balls. Transfer onto a slightly floured plate.   


  • Bring water to the boil. Add in pumpkin balls.  Then with a sieve, transfer the floating lotus to another pot.
  • Add in coconut milk, palm sugar, sugar and salt. Bring to boil until the sugar completely dissolve.   



Transfer to a serving bowl. Serve warm. 
   



Variations :
In Thailand Boa Loi comes with many different colors : purple from taro, orange from carrots, blue from blue pea blossoms, and green from pandan leaves.
