Yum Woonsen (ยําวุ้นเส้น)

Today recipe is Yum Woonsen (Spicy glass noodles salad, ยำวุ้นเส้น). This tasty spicy noodles salad was a favorite and a staple when I lived in Bangkok. It is very easy to make and always requested by my family.  This salad makes the meal and sometimes --it is the meal depending on how much are you hungry. 

I am pretty sure you have tried glass noodles, the main ingredient of this salad, somewhere and if you have, I am sure you love them. For me, I really love the texture of these noodles-- they are chewy, slippery smooth. I used them frequently in stir fry, salad and noodles dishes. In Tokyo, these glass noodles aren't hard to find, I usually found them in most local supermarkets, so they are a staple in my pantry.

It only takes a couple of minutes to whip up this tasty Yum Woonsen and a trip to Asian supermarket will enable you to get the rest of ingredients: fish sauce, lime, chilies, roasted peanuts. Below is my Yum Woonsen (Spicy glass noodles salad, ยำวุ้นเส้น)recipe. 

Ingredients 
80 grams minced pork 
100 ml. water 
1 and 1/2 tablespoon lime juice 
1 tablespoon Thai pickled garlic brine 
1 tablespoon fish sauce
3 red chili peppers, thinly sliced
1/2 teaspoon sugar 
1/2 teaspoon roasted Thai chili paste 
2 shallots,  thinly sliced
4-5 shrimp 
40 grams dried glass noodles 
Preparation 
1. Bring water to a boil, add in minced pork. When the pork is cooked, add in shrimp. When the shrimp turns pink, add the rest of ingredients. 
2. Cook the glass noodles according to package direction. Add the noodles to the pot, stir to combine. Serve immediately.
